Here's a set of Vol-au-Vent cutters, full parametric and written for use with the customizer app.
Pick the shape from Circular, Polygon (including square), Rectangle or Oval then use the relevant tab to adjust sizes as required.
Two cutters can be made. The Bottom cutter is a single cutter for the outside shape. The Top cutter is a pair of cutters to cut a parallel shape (and leaves a smaller bottom cut shape too).
Either shape can be specified for printing (or just to use the bottom cutter as a simple cookie cutter if required).
I've noted the thing as work-in-progress as I'm hoping to look at other shapes in the future, time permitting.
The attached STLs are for a 'nesting' set of oval cutters.
Do please observe food hygiene considerations if you use these. Wash cutters before and after use.
Edit 01Feb22: Thingiverse haven't fixed customizer. I recommend that you install OpenScad if you want to customize.

I still recommend using OpenScad, but you can use TV's customizer too.
