For a whitewater kayak safety course, I wanted a playmobil kayak and a fitting paddle. Also a PFD (personal floating device) and a throw bag. So you can show the theory lessions on the table for different scenarios.
Buy a small diameter cord and small carabiners and you get a complete kit to use.
